Method

    Soak the guajillo and ancho chilis in hot water for 15 minutes until softened.

    Blend the soaked chilis with the garlic, onion, vinegar, pepper, clove, and salt until a smooth sauce is obtained.

    Marinate the beef with the sauce for at least 2 hours in the refrigerator.

    Place the marinated meat in a large pot, add water and bay leaves. Simmer for 4 hours or until the meat is very tender.
